Faugères Appellation d’Origine Protégée
This combines mineral notes of ink and hearth, combined with cocoa beans, Sichuan pepper and a hint of menthol. Rich with a freshness to the finish, this is a perfect illustration of schist terroir.
After de-stemming, the grapes are soaked for a full six weeks to bring out the wine’s garnet hues. Following fermentation, it’s matured for fourteen months in fine Burgundy oak, then for a further fourteen in stainless steel.
